Ingredients
- 50g carrot
- 50g courgettes
- 50g cucumber
- 50g parsnips
Method
- Take skin off vegetables.
- Then peel tagailettle style or use cannolin cutter to create spaghetti style.
- Blanch vegetables (cucumber last).
- Drain and plate up.
- Garnish as necessary.
Raw Tomato, lemon, Basil dressing.
Ingredients
- I large tomato diced
- 1 clove garlic smashed
- Salt, pepper, olive oil, lemon juice
- Shredded basil leaves
Method
Bring all ingredients together and pour over/around/above vegetable dish.
