Ingredients

  • 50g carrot
  • 50g courgettes
  • 50g cucumber
  • 50g parsnips

Method

  1. Take skin off vegetables.
  2. Then peel tagailettle style or use cannolin cutter to create spaghetti style.
  3. Blanch vegetables (cucumber last).
  4. Drain and plate up.
  5. Garnish as necessary.

Raw Tomato, lemon, Basil  dressing.

Ingredients

  • I large tomato diced
  • 1 clove garlic smashed
  • Salt, pepper, olive oil, lemon juice
  • Shredded basil leaves

Method

Bring all ingredients together and pour over/around/above vegetable dish.
