Serves 4
Ingredients
- 1 packet rice noodles – follow instructions on packet
- 1 pint of button mushrooms sliced thick
- 1 pint of Shitake mushrooms sliced thick
- 2 whole jalepenos sliced long
- 4 stalks of green onions sliced long
- ½ batch of fresh cilantro, leave a little for garnish
- 1 lemongrass cut to about 2-3 inches bruised
- 5 kaffir lime leaves, sliced (removed middle stem)
- 1 can of coconut milk
- 2 tbsp of sugar
- 1 tsp of salt
- 1 tbsp of boullion
- 3 tbsp of tamarind
- 3 cups of water
- 2 tbsp chilli paste
Method
- Put ½ the can of coconut milk in pan, wait for it to boil.
- Add lemongrass, lime leaves, sugar, salt, boullion, tamarind.
- Add the other ½ can of coconut milk and the water.
- Add sliced jalepenos and mushrooms.
- Stir gently, add chilli paste.
- Once boiled add onions and cilantro.
- Serve over rice noodles and sprinkle with a little cilantro to garnish.
