VBites restaurant - Saag Paneer

Serves 4 (as a side)

Ingredients

  • 1 ½ bags of spinach wilted
  • 1 onion, chopped
  • 2 cloves of garlic finely chopped
  • 1 green chilli chopped and deseeded
  • 2 tsp cumin seeds
  • 1 tub of VBites vegan Feta style cheese (use 1 tbsp of the oil for frying)
  • Jalfrazi Mix

    • ¼ tsp tumeric powder
    • ½ tsp hot cayenne pepper
    • ½ tsp ground cumin
    • ¾ ground coriander
    • ¼ mango powder (Amchoor) or lemon juice for a sharper taste
    • ¼ tsp cinnamon powder
    • ¼ tsp ground cloves
    • ¼ tsp ground black pepper.

Method

  1. Heat the oil in a large saucepan.
  2. Fry cumin seeds, then add onion and continue to fry until translucent.
  3. Add garlic and chilli.
  4. Add jalfrazi mix of spices and cook on a very low heat, so spices don’t burn.
  5. Squeeze excess water from spinach with hands, and add to pan.
  6. Add feta and cook for 1 minute.
  7. Serve.
