Serves 4 (as a side)
Ingredients
- 1 ½ bags of spinach wilted
- 1 onion, chopped
- 2 cloves of garlic finely chopped
- 1 green chilli chopped and deseeded
- 2 tsp cumin seeds
- 1 tub of VBites vegan Feta style cheese (use 1 tbsp of the oil for frying)
Jalfrazi Mix
- ¼ tsp tumeric powder
- ½ tsp hot cayenne pepper
- ½ tsp ground cumin
- ¾ ground coriander
- ¼ mango powder (Amchoor) or lemon juice for a sharper taste
- ¼ tsp cinnamon powder
- ¼ tsp ground cloves
- ¼ tsp ground black pepper.
Method

Heat the oil in a large saucepan.
- Fry cumin seeds, then add onion and continue to fry until translucent.
- Add garlic and chilli.
- Add jalfrazi mix of spices and cook on a very low heat, so spices don’t burn.
- Squeeze excess water from spinach with hands, and add to pan.
- Add feta and cook for 1 minute.
- Serve.
