Ingredients

  • 1 whole potato
  • ½ carrot peeled
  • ½ parsnip peeled
  • Lemon juice to taste
  • Chopped parsley
  • Olive oil
  • Salt and pepper

Method

  1. Grate potato, carrot and parsnip into a bowl of water with lemon juice.
  2. Drain it off and wring it out till dry.
  3. Put in bowl add chopped parsley, salt and pepper and olive oil.
  4. Lightly oil a 6 inch pan and place ingredients in the pan.
  5. Flatten down, then put into oven.
  6. When brown take out and put on a plate.
