Serves 6-8
Ingredients
- 1 onion
- 2 cloves garlic
- 1 pepper
- 1-2 carrots
- 1 packet of VBites Soya mince
- 1 can sweetcorn (optional)
- 2 tins of plum tomatoes
- 2 tbls tomato puree
- 2 tins of kidney beans - drained and rinsed
- 2-3 tbls tomato ketchup
- 2 tsp mild chili powder or to taste
- 2 tsp (or to taste) cayenne pepper
- 2 tsp garamasla
- 2 tsp paprika
- 2 tsp cumin
- Splash of red wine (optional)
Method
- Saute onions, garlic and cook through for about 5 minutes in olive oil.
- Add spices to taste and cook through. Add a little water if necessary.
- Add carrots, peppers, (sweetcorn if desired).
- Add tomato puree, ketchup and tinned tomatoes, and stir through.
- Add kidney beans.
- If necessary add more water.
- Cook through and leave to simmer for about 10 minutes.
- Add the VBites Soya mince and simmer on low heat for a further 15 minutes.
- Take off the heat add leave to stand. The longer the better (min 40mins, max overnight).
- Add splash of red wine.
- Add salt add pepper to taste and a splash of olive oil.
- Heat and serve.
