Makes 2 burgers

Ingredients

  • 50g cooked lentils
  • Clove of garlic chopped
  • ½ chopped onion
  • ½ carrot
  • ½ stick of celery
  • ½ leek
  • 50g brocolli
  • 50g sauté
  • Flat leaf parsely
  • 1/2 pint of vegetable stock
  • Slices of grainy bread.

Method

  1. Lightly sauté garlic, onion, carrot, celery and leek.
  2. Add brocolli, spinach, fresh flat leaf parsley and ½ pint of veg stock.
  3. Let it reduce down.
  4. Add lentils.
  5. Blend roughy in food processor.
  6. Check seasoning.
  7. Chill down in fridge for a couple of hours.
  8. Make bread crumbs from a healthy grain loaf.
  9. Take blended mix out of fridge add bread crumbs and shape.
  10. Put back in the fridge until set.
  11. Reshape, lightly oil then grill.
