Makes 2 burgers
Ingredients
- 50g cooked lentils
- Clove of garlic chopped
- ½ chopped onion
- ½ carrot
- ½ stick of celery
- ½ leek
- 50g brocolli
- 50g sauté
- Flat leaf parsely
- 1/2 pint of vegetable stock
- Slices of grainy bread.
Method
- Lightly sauté garlic, onion, carrot, celery and leek.
- Add brocolli, spinach, fresh flat leaf parsley and ½ pint of veg stock.
- Let it reduce down.
- Add lentils.
- Blend roughy in food processor.
- Check seasoning.
- Chill down in fridge for a couple of hours.
- Make bread crumbs from a healthy grain loaf.
- Take blended mix out of fridge add bread crumbs and shape.
- Put back in the fridge until set.
- Reshape, lightly oil then grill.
