VBites restaurant - Basic Soup recipe

This recipe makes (4-5 portions).

Ingredients

  • 2 cloves garlic
  • Sprig of flat leaf parsley
  • 50g leek
  • 50g onion
  • 50g carrot
  • 50g celery
  • 50g mushrooms
  • Sprig of thyme
  • 2 pints of stock
  • 500g of main vegetable ingredient (kitchens choice)
  • Extra 50g of main ingredient

Method

  1. Saute above for 5 – 6 minutes.
  2. Add  2 tbls stock to 2 pints of liquid.
  3. Add main vegetable simmer until cooked.
  4. Liquidize.
  5. Pass through sieve.
  6. Put back on the stove chop and add 50g of main ingredient.
  7. Bring back to boil to cook off.
