Pastry

Ingredients

  • 100g plain flour
  • 40g margarine
  • approx 2 – 3 tbsp of water
  • salt

Method

  1. Mix together and chill in fridge.
  2. After an hour take out and roll out into a quiche dish.
  3. Bake blind for 10mins.
  4. Moderate oven.

Filling

Ingredients

  • 60g whole egg replacer
  • 100ml soya milk
  • Salt and pepper season
  • Chives to season
  • 100g asparagus

Method

  1. Boil asparagus, drain it off.
  2. Mix the egg replacer, soya milk, seasoning.
  3. Pour the egg mixture into your quiche.
  4. Place asparagus on the top and grate some VBites cheese on the top.
  5. Drizzle a touch of olive oil over the top and put back into oven.
